What should be ideal food for a diabetic person?
The main aim of a meal for a diabetic person is that it should avoid any fluctuations in blood sugar levels. Any steep rise or fall in the blood sugar on a long term can affect the eyes, nerves, heart and so on.
To regulate the blood sugar, a meal should consist of food with low glycemic index or food with complex carbohydrates. They include whole grain cereals like whole wheat, brown/red rice; pulses and legumes like whole masoor/chana/rajma and so on; Millets like ragi, foxtail millet. Root vegetables like carrot, beetroot, potatoes should be taken in moderation. Include vegetables high in fibre and moisture like gourds, beans, brinjal, ladies finger and so on. Fruits should be eaten in moderation. Fruits like watermelon, muskmelon, apple, papaya are the preferred choice.
An example for the ideal lunch is two multigrain phulkas with beans subzi + Whole masoor dal with brown rice with methi + Cucumber raita and Salad with lemon-pepper dressing. Such a meal is high on fibre, low on simple sugar thereby preventing any major fluctuations in blood sugar levels.
